The dearth of subsidies means they cannot now survive without diversifying, and why toil all year to make on a field what you can make on a night if you invest in converting barns to tourist accommodation, or 'shepherds huts' (and grants are available to assist with capital tourism projects). Also, crops in Spain are a fraction of what they used to be with the heat, so substitute sources for foodstuffs are becoming fewer, causing, as you say, shortages and price rises.
