Walking the Saxon Shore Way will get you Gravesend > Whitstable, Pegwell Bay (almost) > Deal, Walmer > Dover and Rye > Hastings.
I find it quite motivating to "fill in the gaps" when walking, and be able to say I've walked x total miles.

You really ought to complete Dover -> St Margarets Bay -> Walmer /Deal - it's a real treat of a section, along the White Cliffs into St Margarets Bay, then climbing back up to the rolling fields, and the slow descent to Kingsdown.

You'll also love heading east out of Hastings through the Country Park to Fairlight, a village slowly slipping down the cliffs into the sea.

Both walks are described well in the Time Out Country Walks - volume 2, also on their website
Missing: Your peregrination along the Sheppey coast. As an ex-islander, I am outraged (not really, we're used to being either a) ignored, or b) the punchline in rather obvious jokes). Carry on.
