Went down the caves a couple of years ago and as you say very interesting. Our guide then was also very entertaining as well as informative. He told us that in the days when pubs had straw on the floor the local pubs used sand which was carried to them in a bucket by local boys. Their reward was a glass of beer from each pub! Hence the expression 'happy as a sandboy'. Don't know how true this is but it makes a good tale.
The French Knight who built the original caves was the Second Earl of Surrey, William de Warenne. His father, presumably the First Earl of Surrey, had come over with the Conquest.
The road tunnel was built to avoid a steep sharp bend where carriages frequently rolled over. The road now follows the old route and, yes, from time to time lorries roll over on the sharp bend.
